A Quarter Cow. Enough Beef to Change How Your Family Eats.
Approximately 125–150 lbs of show-finished Two & Five Ranch beef, vacuum-sealed and frozen.
Stock your freezer with beef that has a story behind every cut. A Two + Five Ranch quarter cow gives your family four to six months of premium beef — from weeknight ground beef to special occasion ribeyes — all from a single steer you can trace back to the show ring.
We work with Texas 4-H and FFA families to finish their post-show steers on our proprietary Two + Five Finish Line™ three-phase program. Ninety days of precision feeding, daily health monitoring, and a documented finishing protocol designed to achieve USDA Prime grade. The carcass report doesn't lie — and we share it.
What's in your quarter: A mixed quarter draws from across the animal and includes representation from every primal group:
Steaks from the loin — ribeyes, strips, and tenderloins in your requested thickness
Chuck roasts and steaks for your weekend braises and Sunday pot roasts
Round roasts for slow cooker meals and thin-sliced sandwich cuts
Your share of brisket — trimmed to your specification
Short ribs or back ribs (depending on cut availability from your quarter)
Flank or skirt steak when available
Approximately 40–50 lbs of 80/20 ground beef in vacuum-sealed packages
A note on quarters: A mixed quarter is drawn from across the whole animal — you won't receive only the front or only the rear. This gives you the most balanced and versatile selection. If you have specific preferences, note them on your cut sheet and we'll do our best to accommodate.
Freezer space: Plan for approximately 4–5 cubic feet — a dedicated shelf in a standard upright or a small chest freezer handles it with room to spare.
Cut sheet: Your beef is cut to order. We'll send you a cut sheet when your order is confirmed — choose your steak thickness, ground beef package size, and roast preferences. This is not a preset bundle.
Beef purchases are tax exempt in Texas.
